The wine is a carefully structured blend, crafted to respect the individual characters of each variety and to capture their harmony when in concert.
The winemaking process saw the Saperavi, Tannat and Tempranillo harvested and fermented as one parcel in a small open fermenter. These varieties contain a great deal of tannin and flavours in their skins so during the fermentation period our attention was focused on achieving the right level of extraction for the wine to have considerable aging potential. The Shiraz and Cabernet Sauvignon components were blended after maturation to provide additional complexity, and continue the Quintus tradition. Maturation occurred in fine grain oak barrels.
The palate is seamlessly powerful as well as elegant with fine, persistent tannins, a vibrant black fruit spectrum and notes of liquorish. Most notably, the wine is complex, layered and unique. Perfect with a range of robust meals. We are confident in the aging potential of this wine to be 10+ years.
